In 2008, CommuniTea was the first local company to market kombucha in the Seattle area. We have been available in Whole Foods Market since 2012 and in PCC Community Markets since 2014. 

What makes CommuniTea’s kombucha outstanding and unique?

  • We start with great tea.

Kombucha is brewed from tea, and most kombucha on the market is brewed from black tea. CommuniTea Kombucha is brewed from single-source organic green tea from Nepal and Darjeeling (the tea from Darjeeling is Biodynamic). Green tea kombucha is harder to make than black tea kombucha, but the results are superior. Green tea has more healthful antioxidants and polyphenols than black tea, and, in contrast to the vinegary flavor profile of black tea kombucha, ours has a clean flavor with mouth-watering citrus notes.                                                       

  • We value the traditional fermentation process. We make no effort to limit production of alcohol, nor do we boost it.

CommuniTea was the first kombucha brewery in Washington to receive an alcohol license, and here’s why: To make great kombucha, it is crucial to let the fermentation process follow its traditional course, which includes allowing the development of a small amount of alcohol (less than 2%). This alcohol serves an essential role in the complex kombucha fermentation process. Yes, it is true that if the alcohol rises above 0.5%, the beverage must be regulated by the Washington State Liquor Control Board. However, if we inhibited the development of alcohol, we would never be able to produce a product as delightfully effervescent and flavorful as CommuniTea Kombucha.

  • We produce our delightful champagne-like effervescence naturally during a period of secondary fermentation.

One of the secrets to producing a lively effervescent Kombucha is our two-phase fermentation technique. The second phase is where and when the naturally occurring carbonation is captured in the bottle.

CommuniTea Kombucha features the authentic flavor of traditional kombucha. To achieve this, we attend deeply to the integrity of the traditional brewing process. This authentic flavor would be masked by adding flavorings, so we add none. This is very rare in the current kombucha market.
